It’s been a while since I posted a recipe so when I made some soup I thought I’d share it. It’s really good, healthy, filling, and good for the soul - as all homemade soup is, I firmly believe!

So, you will need 1 tbsp oil, 1 or 2 garlic cloves, a small piece of ginger, 250g red lentils, 1.2 litres of vegetable stock, a medium sized butternut squash cut into small cubes, a sprinkle of cumin seeds or 1 tsp of cumin powder, a packed of coconut cream. And some chilli flakes, natural yogurt, and coriander if you like!

Heat the oil over a medium heat, add the onions and soften, add the grated ginger and crushed garlic and stir for a few minutes. Add the squash and stir for a few more minutes, add the lentils and enough stock to cover everything (a litre or slightly more should do it). Bring to the boil and simmer for 15-20 minutes or until the squash and lentils are tender. Turn off the heat and blend. Turn back on the heat and add in the coconut cream, stirring until it is fully incorporated. Serve with chilli flakes, a dollop of yogurt and garnish with coriander if you’re feeling fancy!

Dunk in some bread. Enjoy.
